A Breakfast of Champions: Warm Cinnamon Quinoa

The only reasons I wake up before 7am are:

1.) I’m scheduled to work my coffeeshop job (Which is ok because there are approximately 14 minutes between my bed and an unlimited supply of caffeine.)

2.) I’m traveling somewhere (Also ok because my inner clock goes kaput the minute it knows we’re en route)

3.) I have a final exam at 9:30am and managed to study Facebook and the contents of my fridge the night before instead of my textbooks. (Not ok)

or, like this morning, my brother was leaving the midwest for sunny CA and needed to be bid adieu (inevitable)

Most mornings when I wake before the sun, I’m disoriented and draggy and begin to frighten people with my loopiness as the day carries on.

But not today. Today I woke up feeling like I hadn’t missed an hour of sleep in my life. Clear and focused–it was go time. First item on my conquer-the-world agenda: breakfast. Yes, I do have my priorities in order.

I decided to play with a recipe from 101 Cookbooks I’ve had my eye on for a while. This breakfast is packed with protein, antioxidants, fiber, flavor…everything a champion needs to take on her day. It’s a winner even if you’re champion at staying in bed for just. a few. more. hours.

Warm Cinnamon Quinoa

Serves 4

Ingredients

1 cup whole milk
1 cup water
1 cup quinoa, rinsed
2 cups fresh berries
1/2 teaspoon ground cinnamon
1/3 cup chopped toasted nuts (I like pecans or almonds)
4 teaspoons raw honey

Directions

Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered for 5 minutes. Stir in berries, cinnamon and honey; transfer to four bowls and top with nuts. Conquer.
