Mission: Cook a tasty dinner and eat it in my 60-minute break between a class and a meeting
Ingredients in fridge: Eggs, milk, broccoli, onion, cheddar cheese
The plan: Cheesy Crustless Quiche (Cheesy in a good way!)
Results: A perfectly satisfying dinner, plus the next day’s lunch and dinner, and the next day’s breakfast. It was that good.
Cheesy Crustless Quiche recipe
3/4 cup whole milk
1 1/2 cups cheddar cheese, grated
2 teaspoons Italian seasoning (or your favorite herbs)
Salt and pepper to taste
Hot sauce (optional)
1 medium onion, chopped and sautéed
1 stalk broccoli, chopped and steamed
Whisk eggs, milk, cheese, seasoning, salt and pepper together. Add a dash of hot sauce if you enjoy some heat. Distribute broccoli and onion evenly over the bottom of a greased pie pan. Pour the egg mixture over the broccoli and onion. Bake at 375 for 40 minutes, or until set and lightly brown around the edges. Cool slightly, slice, and enjoy.
