Narrative of a Honey Acorn Squash Cake

Setting: A fully stocked apartment kitchen on a cold, unusually quiet weeknight

Character: A college kid with a sweet tooth and a strong desire to procrastinate on doing homework

Conflict: An acorn squash looms eerily over the kitchen counter, threatening to shrivel and rot and turn into the Squash Monster if not conquered and cooked immediately

Resolution: College kid takes down squash with knife and preheated oven, turns into Honey Acorn Squash Cake. Apartment residents and sweet tooths alike rejoice.

Honey Acorn Squash Cake


2 cups white whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon nutmeg

2 teaspoons cinnamon

1 cup baked, mashed acorn squash *

1 cup honey

1 stick butter, melted

2 eggs, whisked

1/2 cup chocolate chips (optional)

*Use canned pumpkin or sweet potato purée if you prefer


Place rack in middle of oven, preheat to 350 degrees. Grease and flour a round 9 inch cake pan. Whisk dry ingredients together. In separate bowl, mix together squash, honey, butter, eggs and chocolate chips (if using). Add to dry ingredients and stir until just blended. Pour into greased pan and place in preheated oven. Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean. Let cool before cutting or removing from pan.
