Sometimes when I step into the kitchen, I like to step out of the box. It’s easy to whip up simple salads, tortizzas, or veggie-laden pasta dishes every night for dinner, but there are days I just don’t feel like eating another darn tortizza.
When it comes to healthful adaptations, I get excited to take dinner time a new direction. Let’s be real–I get excited to take anything in a healthful new direction. From my experiences, making a wholesome leap is not always easy and often demands a multiple attempts before the change feels like just another part of a routine Luckily for us, these pizza bites are about as simple as recipes come, and nearly impossible to fudge up. Not to mention, they are high-fiber, low-carb, gluten-free, antioxidant-rich, and mega-tasty. So really, why not?
Flax Crust Pizza Bites
Adapted from Back to Her Roots
Makes 6 mini pizzas
1 cup finely-ground flaxseed
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano or other Italian herbs
1/2 cup pizza sauce
1/2 cup shredded pizza cheese of your choice (I used sharp cheddar)
Your favorite pizza toppings (I used olives)
Preheat oven to 400°. Grease a baking sheet with olive oil. In a medium mixing bowl, combine flax, eggs, Parmesan and herbs. Mixture will be sticky. Let rest for 5-10 minutes or until the crust is easy-to-handle. To make pizza bites, take a small amount of the dough and form into a ball roughly 1-1/2″-2″ in diameter. Press into a flat, thin disc (about 1/4″ thick) and place on the prepared baking sheet. Repeat with remaining dough. You should have enough dough to make about a dozen mini crusts. Bake in preheated oven for 8-10 minutes or until the dough is golden brown. Remove from oven, top with pizza sauce, toppings and cheese. Return to oven for 8-10 minutes or until the cheese is browned and bubbly.
