This week we’re getting boozy with our cheese! This cheese hails from southeast Spain and is soaked in red wine for 2-3 days before it is aged, giving it a dark purple rind and a wonderfully winey aroma. The semi-soft white interior is neither too pungent nor too dull–the soft earthiness of the goat milk combined with the mild red wine flavor make Drunken Goat a cheese that’s not boring but not overly complex, either. For those reasons it’s a real crowd pleaser, and probably explains how I ate through a small wedge in a matter of days…
