Raise your hand if you have canned tuna in your kitchen cabinet at this very moment.
My guess is, at least 50% of you have this staple on hand as I write. Because if you grew up anything like me, you quickly learned that canned tuna was a fast, cheap, and healthy solution to hunger pains at any time of day. Tuna salad, tuna wraps, the occasional forkfuls of tuna straight from the can–the in-a-pinch possibilities are endless.
This is one of my recent favorites.
It’s as easy as dumping two small cans of tuna into a mixing bowl with one egg, a few healthy dashes of your favorite hot sauce, and enough bread crumbs to make the mixture dry enough to form into a patty, about 1/4 cup.
Heat extra virgin olive oil in a skillet on medium heat. Form tuna into 2-3 patties and cook on each side until golden brown and cooked through. Remove from heat and garnish with your favorite condiments. I recommend sliced avocado and tomato, and a dash of salt and pepper.
